Spring days, warmer weather and long evenings are coming our way  Our meals start to change and salads become quick, fresh and easy ways to fuel your family and friends.  Our Bacon, tomato and avocado salad is a quick and easy, perfect way to compliment a BBQ or slow cooked pulled lamb.  Roasting the tomatoes offers that little touch of something extra special.


Fresh mixed lettuce leaves

4-5 Rashers of Bacon (free range, gluten free)

3-4 medium sized tomatoes

1 1/2 avocado

olive oil

Balsamic vinegar

Serves approx 5 people



  • Chop the tomatoes into small wedges and place on a lined baking tray. Season with salt and pepper and drizzle with olive oil and balsamic.  Roast until soft and set aside.
  • Slice the bacon and fry of to your desired level of ‘crispy’.
  • Spread a generous layer of lettuce over a serving bowl or platter, evenly distribute the bacon, tomato and sliced avocado over the lettuce.
  • Dress the salad with some olive oil and a small amount of balsamic vinegar.

Ratio of ingredients should be adjusted depending on the number of people you are serving.  There is no right or wrong combination.
