Our Bacon, tomato and avocado salad is a quick and easy, perfect way to compliment a BBQ or slow cooked pulled lamb. Roasting the tomatoes offers that little touch of something extra special.
Fresh mixed lettuce leaves
4-5 Rashers of Bacon (free range, gluten free)
3-4 medium sized tomatoes
1 1/2 avocado
Serves approx 5 people
- Chop the tomatoes into small wedges and place on a lined baking tray. Season with salt and pepper and drizzle with olive oil and balsamic. Roast until soft and set aside.
- Slice the bacon and fry of to your desired level of ‘crispy’.
- Spread a generous layer of lettuce over a serving bowl or platter, evenly distribute the bacon, tomato and sliced avocado over the lettuce.
- Dress the salad with some olive oil and a small amount of balsamic vinegar.
Ratio of ingredients should be adjusted depending on the number of people you are serving. There is no right or wrong combination.
