Some times there’s a day…… a day when you need something a little extra, when you need something for lunch boxes, or when you just want to treat your friends and family.
Our 2 varieties of Coconut Logs will tickle the fancy of both the chocolate lover and the fruity palate. Are they for every day? No, of course not, though of the 2 versions, the chocolate will be the kindest fuel for your metabolic fire.
Apricot logs
200g Dried Apricots
1/4 cup coconut oil
2 cup unsweetened desiccated coconut
1/2 cup blanched Almond meal (optional)

Cacao coconut logs
3 cups desiccated coconut
1/4 cup melted coconut oil
1/4 cup raw honey (or to taste, go easy…)
1 heaped Tbsp raw cacao powder
1.5 blocks of 90% Lindt Dark chocolate

Method
Apricot coconut logs
- Soak the pried apricots in water until they look soft and puffy. Drain the water
- Place the apricots, coconut, almond meal and coconut oil into a food processor and blend until well mixed.
- Roll the mixture into logs and roll in coconut. Chill in the fridge
Cacao coconut logs
- Place the coconut, honey, cacao powder, and coconut oil in the food processor and process until well mixed.
- Melt the chocolate in a small bowl over a pot of simmering hot water on the stove top.
- Roll the mixture into small logs, roll in the melted chocolate and place onto baking paper.
- Chill to set the mixture and the chocolate.
