Our delicious Butter Chicken takes an all round family classic and makes it a ‘Real Food nutrition’ friendly family meal.  Easy to prepare and delicious, this recipe is a winner that even the kids will love.

Team it up with Coconut Rice and some lightly steamed greens, and your meal is complete.  We’re taking Real Food ingredients and making life easy for good health.  Enjoy!!

Ingredients

1 kg Free range chicken thighs

2 tsp(s) Garam Masala
2 tsp Paprika
2 tsp, Ground Coriander
1 tbsp Ginger
1/4 tsp Chilli powder
1 Cinnamon Stick

3/4 Cup unsweetened Coconut Milk

1 tbsp Lemon juice

3 tbsp Olive oil (or coconut oil)

1 tsp Cardamon, Ground

400g Tinned Diced Tomatoes In Juice

 

Cauliflower Rice

1 head of Cauliflower shredded

2 tbsp Olive oil

1/2 Red onion

1 -2 cloves of Garlic

Salt

Pepper

Method

Butter Chicken

Add the olive oil, spices and garlic to the pan and fry off in over medium heat.

Add the chopped chicken thighs and stir through until lightly coated and starting to cook through.

Add the tomatoes and simmer for aprox 10 minutes.

Stir through the coconut milk and lemon juice.  Cook until chicken is cooked through.

Cauliflower rice

Heat Olive oil or coconut oil in a pan

Fry onion and garlic until it is soft and tender

Toss Shredded Cauliflower through the hot oil and cook until tender

Season with salt and pepper

Add herbs if desired for colour and flavour.  A small amount chopped broccoli florets also add colour and variety to your cauliflower rice.  Heat through until tender.

 

Serves 5 people.  Add some blanched or lightly steamed broccolini to your plate as a perfect partner for both nutrients and presentation.  ENJOY!!
